Ingredients

  • 1/2 cup granulated sugar, more as needed
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, or margarine
  • 1/2 cup crunchy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups (6 1/2 ounces) all-purpose flour
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon baking soda

Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the granulated sugar, brown sugar, butter, and peanut butter until light and fluffy.
  • Beat in the egg and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, salt, and baking soda. Gradually add to the wet mixture, mixing until fully incorporated.
  • Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet. Flatten each with a fork in a crisscross pattern.
  • Bake for 10-12 minutes or until the edges are golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.
