- 4 tablespoons butter, divided
- ½ pound lean ground beef
- ¾ cup chopped onion
- ¾ cup shredded carrots
- ¾ cup chopped celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 cups cubed potatoes
- 3 cups chicken broth
- ¼ cup all-purpose flour
- 1 ½ cups milk
- 2 cups cubed Cheddar cheese
- ¼ cup sour cream
Instructions
- Melt 1 tablespoon of butter in a large pot over medium heat. Add the ground beef and cook until browned. Remove beef and set aside.
- In the same pot, add the remaining butter, onion, carrots, and celery. Sauté until vegetables are tender.
- Stir in basil and parsley. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- In a small bowl, whisk flour and milk until smooth. Gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Reduce heat to low; stir in cheese until melted. Add the cooked beef back to the pot.
- Remove from heat; stir in sour cream.
Notes
For a thicker soup, reduce the amount of broth. For a lighter version, use low-fat cheese and sour cream.
