A creamy, hearty soup that combines the flavors of a classic cheeseburger into a warm and comforting bowl. Perfect for a cozy night in.


Ingredients

  • 4 tablespoons butter, divided
  • ½ pound lean ground beef
  • ¾ cup chopped onion
  • ¾ cup shredded carrots
  • ¾ cup chopped celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • ¼ cup all-purpose flour
  • 1 ½ cups milk
  • 2 cups cubed Cheddar cheese
  • ¼ cup sour cream

Instructions

  • Melt 1 tablespoon of butter in a large pot over medium heat. Add the ground beef and cook until browned. Remove beef and set aside.
  • In the same pot, add the remaining butter, onion, carrots, and celery. Sauté until vegetables are tender.
  • Stir in basil and parsley. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • In a small bowl, whisk flour and milk until smooth. Gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Reduce heat to low; stir in cheese until melted. Add the cooked beef back to the pot.
  • Remove from heat; stir in sour cream.

Notes

For a thicker soup, reduce the amount of broth. For a lighter version, use low-fat cheese and sour cream.
