- 1 pound penne pasta
- 2 tablespoons butter, divided
- 4 boneless, skinless chicken breasts, trimmed of fat and cut crosswise into 1/4-inch slices
- 2 tablespoons Cajun-style blackened seasoning
- 4 cloves garlic, chopped
- 1 large red onion, cut into wedges
- 1 green bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 1 yellow bell pepper, seeded and sliced into strips
- 1 teaspoon crushed red pepper flakes
- ¼ teaspoon curry powder
- Salt and pepper to taste
- 2 (24 ounce) jars meatless spaghetti sauce
Instructions

- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced chicken breast and season with Cajun-style blackened seasoning. Cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
- In the same skillet, melt the remaining tablespoon of butter. Add garlic, onion, and bell peppers. Sauté for about 5-7 minutes until the vegetables soften.
- Stir in the crushed red pepper flakes, curry powder, salt, and pepper. Add the cooked chicken back into the skillet.
- Pour in the spaghetti sauce and simmer for 10 minutes to allow the flavors to meld together.
- Add the cooked pasta to the skillet, tossing to combine and heat through.
- Serve hot, garnished with fresh herbs (optional).
Notes
- For added creaminess, consider adding a splash of heavy cream or coconut milk.
- If you prefer more heat, increase the amount of crushed red pepper flakes or use a spicier Cajun seasoning.
