Description

A vibrant, spicy fusion of pasta with chicken, colorful bell peppers, and a rich, flavorful sauce.


Ingredients

  • 1 pound penne pasta
  • 2 tablespoons butter, divided
  • 4 boneless, skinless chicken breasts, trimmed of fat and cut crosswise into 1/4-inch slices
  • 2 tablespoons Cajun-style blackened seasoning
  • 4 cloves garlic, chopped
  • 1 large red onion, cut into wedges
  • 1 green bell pepper, seeded and sliced into strips
  • 1 red bell pepper, seeded and sliced into strips
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 teaspoon crushed red pepper flakes
  • ¼ teaspoon curry powder
  • Salt and pepper to taste
  • 2 (24 ounce) jars meatless spaghetti sauce

Instructions

    1. Cook the penne pasta according to package instructions. Drain and set aside.
    2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced chicken breast and season with Cajun-style blackened seasoning. Cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
    3. In the same skillet, melt the remaining tablespoon of butter. Add garlic, onion, and bell peppers. Sauté for about 5-7 minutes until the vegetables soften.
    4. Stir in the crushed red pepper flakes, curry powder, salt, and pepper. Add the cooked chicken back into the skillet.
    5. Pour in the spaghetti sauce and simmer for 10 minutes to allow the flavors to meld together.
    6. Add the cooked pasta to the skillet, tossing to combine and heat through.
    7. Serve hot, garnished with fresh herbs (optional).

Notes

  • For added creaminess, consider adding a splash of heavy cream or coconut milk.
  • If you prefer more heat, increase the amount of crushed red pepper flakes or use a spicier Cajun seasoning.
