- For the Meatloaf:
- 1.5 pounds ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- ¼ cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup ketchup
- For the Potato Layer:
- 2 pounds potatoes, peeled and sliced
- ½ cup sour cream
- ¼ cup milk
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- ¼ cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the Meatloaf: In a large bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, ¼ cup milk, egg, Worcestershire sauce, 1 teaspoon salt, and ½ teaspoon black pepper. Mix until just combined (do not overmix).
- Press the meatloaf mixture evenly into the bottom of a 9×13-inch baking dish. Spread the ½ cup ketchup over the top of the meatloaf.
- Prepare the Potato Layer: In a large pot, add peeled and sliced potatoes. Cover with cold water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes thoroughly. Return them to the pot.
- Add sour cream, ¼ cup milk, butter, and salt and pepper to taste to the cooked potatoes. Mash until smooth and creamy.
- Stir in ½ cup of shredded cheddar cheese and all of the chopped green onions into the mashed potatoes.
- Assemble and Bake: Carefully spoon the mashed potato mixture over the meatloaf layer, spreading it evenly to the edges of the dish.
- Sprinkle the remaining ½ cup of shredded cheddar cheese over the potato layer.
- Bake for 30-35 minutes, or until the casserole is bubbling around the edges and the cheese is melted and golden brown.
- Let stand for 5-10 minutes before serving.
Notes
For a richer flavor, consider using a mix of ground beef and ground pork in the meatloaf. Adjust seasoning to your preference. Leftovers store well in the refrigerator for up to 3 days.
