A simple and classic recipe for a traditional St. Louis Gooey Butter Cake, featuring a buttery, melt-in-your-mouth base and a creamy, gooey topping.

- 1 (18.25 ounce) package yellow cake mix
- ½ cup butter, melted
- 4 large eggs, divided
- 2 teaspoons vanilla extract, divided
- 1 (8 ounce) package cream cheese
- 4 cups confectioners’ sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the cake mix, melted butter, 2 eggs, and 1 teaspoon of vanilla extract. Mix well and press the mixture into the bottom of the prepared dish.
- In another bowl, beat the cream cheese until smooth. Add the remaining 2 eggs, 1 teaspoon of vanilla extract, and confectioners’ sugar. Mix until fully combined and smooth.
- Pour the cream cheese mixture over the cake mixture in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly gooey. Do not overbake.
- Allow the cake to cool in the dish before cutting into squares.
Notes
This cake is meant to be gooey in the center, so don’t worry if it seems a bit underbaked in the middle. It will set as it cools.
