- 2 chicken breasts, diced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup soy sauce
- 1 tbsp honey
- 2 tsp cornstarch
- 1/4 cup chicken broth or water
- 2 tsp minced garlic
- 1 tsp grated ginger (optional)
- 2 cups broccoli florets
- 1 tbsp sesame oil (optional)
- 1 tbsp sesame seeds (optional garnish)
Instructions
- In a small bowl, whisk together soy sauce, honey, cornstarch, and chicken broth (or water) until smooth. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Season diced chicken with salt and black pepper, then sauté until browned and cooked through (about 5–7 minutes). Remove from the skillet and set aside.
- In the same skillet, add broccoli florets and stir-fry for 3–4 minutes until tender but still crisp. Add a splash of water if needed to help steam the broccoli.
- Push the broccoli to one side of the skillet and add minced garlic (and grated ginger, if using). Stir until fragrant, about 30 seconds.
- Return the chicken to the skillet and pour in the prepared sauce. Cook, stirring frequently, until the sauce thickens and coats the chicken and broccoli (2–3 minutes).
- Drizzle with sesame oil, if desired, and garnish with sesame seeds before serving.
Notes
- Substitute broccoli with other vegetables like snap peas, bell peppers, or carrots for variety.
- Serve over rice, noodles, or cauliflower rice for a complete meal.
