Chicken & Stock:

  • 2 chicken breasts, boneless and skinless
  • 10 cups chicken stock (or 10 bouillon cubes dissolved in 10 cups water)
  • Parsley flakes, 1 stalk celery (chopped), ½ medium onion (chopped)

Dumplings:

  • 2 cups self-rising flour
  • ¼ tsp pepper
  • 2 eggs, well beaten
  • 3 tbsp melted butter
  • ⅔ cup milk

Instructions

  • Boil chicken breasts in the stock with celery, onion, and parsley until cooked. Remove chicken, shred, and set aside.
  • Mix dumpling ingredients until just combined. Avoid overmixing.
  • Bring stock to a boil, drop spoonfuls of dough into the pot, reduce heat, and simmer until dumplings are cooked through.
  • Add shredded chicken back to the pot, stir gently, and serve.
