Ingredients

Chicken & Stock:
- 2 chicken breasts, boneless and skinless
- 10 cups chicken stock (or 10 bouillon cubes dissolved in 10 cups water)
- Parsley flakes, 1 stalk celery (chopped), ½ medium onion (chopped)
Dumplings:
- 2 cups self-rising flour
- ¼ tsp pepper
- 2 eggs, well beaten
- 3 tbsp melted butter
- ⅔ cup milk
Instructions
- Boil chicken breasts in the stock with celery, onion, and parsley until cooked. Remove chicken, shred, and set aside.
- Mix dumpling ingredients until just combined. Avoid overmixing.
- Bring stock to a boil, drop spoonfuls of dough into the pot, reduce heat, and simmer until dumplings are cooked through.
- Add shredded chicken back to the pot, stir gently, and serve.
Notes
- Use fresh parsley for garnish for added flavor and presentation.
