Description

This creamy chicken and rice casserole is a one-dish wonder, combining tender chicken, cauliflower rice, and a cheesy, flavorful sauce.

 


Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup ranch dressing
  • 1/4 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cups shredded chicken
  • 1 1/2 cups cauliflower rice, cooked or frozen
  • 1 cup shredded cheddar cheese, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup chopped scallions

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine cream cheese, ranch dressing, heavy cream, chicken broth, and 1/2 cup of shredded cheddar cheese. Mix until smooth.
  • Stir in the shredded chicken, cauliflower rice, and chopped scallions. Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish and sprinkle with the remaining cheddar cheese.
  • Bake for 20-25 minutes, until bubbly and golden on top

Notes

For extra flavor, add garlic powder, onion powder, or other seasonings of your choice.
