- 8 ounces cream cheese, softened
- 1/4 cup ranch dressing
- 1/4 cup heavy cream
- 1/2 cup chicken broth
- 2 cups shredded chicken
- 1 1/2 cups cauliflower rice, cooked or frozen
- 1 cup shredded cheddar cheese, divided
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup chopped scallions
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine cream cheese, ranch dressing, heavy cream, chicken broth, and 1/2 cup of shredded cheddar cheese. Mix until smooth.
- Stir in the shredded chicken, cauliflower rice, and chopped scallions. Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish and sprinkle with the remaining cheddar cheese.
- Bake for 20-25 minutes, until bubbly and golden on top
Notes
For extra flavor, add garlic powder, onion powder, or other seasonings of your choice.
