Description

These soft and creamy Cheesecake Cookies are a delightful fusion of classic sugar cookies and rich cheesecake flavor. With a tender texture and a subtle tang from cream cheese, they’re perfect for dessert trays, holiday baking, or whenever you want a melt-in-your-mouth treat.


Ingredients

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, room temperature

  • 8 ounces cream cheese, room temperature

  • 1 cup granulated sugar

  • 2 large eggs

  • 2 teaspoons pure vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. Cream butter and cream cheese: In a large bowl, beat the butter and cream cheese together until smooth and creamy.

  4. Add sugar: Add the granulated sugar and beat until light and fluffy.

  5. Mix in eggs and vanilla: Beat in eggs one at a time, then stir in vanilla extract.

  6. Combine: Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  7. Chill dough: Cover and chill dough for 30 minutes to make it easier to handle.

  8. Scoop and shape: Scoop dough by heaping tablespoons and roll into balls. Place on prepared baking sheets about 2 inches apart.

  9. Bake for 10–12 minutes, or until edges are set and tops are slightly puffed (do not overbake).

  10. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a festive twist, roll the dough in sugar or sprinkles before baking.

These cookies can be topped with a dollop of fruit preserves or a light glaze for extra flavor.

Store in an airtight container in the fridge for a cheesecake-like experience.
