- 1 tablespoon olive oil
- 1 small onion (chopped)
- 2 chicken breasts (cut into small cubes)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 cloves garlic (minced)
- ¾ cup rice (uncooked)
- 10 ounces cream of chicken soup (1 can)
- 2 cups chicken broth (low sodium)
- 2 cups broccoli florets
- 1 cup cheddar cheese
- 1 tablespoon fresh parsley (chopped)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Sauté onions until translucent.
- Add chicken, salt, and pepper. Cook until the chicken is no longer pink.
- Stir in garlic and cook for 1 minute.
- Add rice, cream of chicken soup, and chicken broth. Stir well.
- Simmer for 10 minutes, stirring occasionally.
- Fold in broccoli florets and transfer to a greased casserole dish.
- Top with cheddar cheese and bake uncovered for 25 minutes.
- Garnish with parsley before serving.
