Description

Ingredients

  • 1.25 cups butter, divided
  • 4 onions, chopped
  • 4 stalks celery, chopped
  • 12 cups chicken broth
  • 32 cups broccoli florets
  • 12 tablespoons all-purpose flour
  • 8 cups milk
  • Ground black pepper to taste

Instructions

  • Melt 1 cup of butter in a large pot. Sauté onions and celery until tender.
  • Add chicken broth and bring to a boil. Stir in broccoli florets and cook until tender.
  • In a separate pan, melt the remaining butter and whisk in flour to create a roux. Gradually add milk, stirring until thickened.
  • Combine the roux with the soup base and simmer for 10 minutes.
  • Blend the soup to desired consistency using an immersion blender.
  • Season with black pepper and adjust to taste. Serve warm.

Notes

  • For a vegan adaptation, use plant-based milk and broth, and vegan butter.
