- 1.25 cups butter, divided
- 4 onions, chopped
- 4 stalks celery, chopped
- 12 cups chicken broth
- 32 cups broccoli florets
- 12 tablespoons all-purpose flour
- 8 cups milk
- Ground black pepper to taste
Instructions
- Melt 1 cup of butter in a large pot. Sauté onions and celery until tender.
- Add chicken broth and bring to a boil. Stir in broccoli florets and cook until tender.
- In a separate pan, melt the remaining butter and whisk in flour to create a roux. Gradually add milk, stirring until thickened.
- Combine the roux with the soup base and simmer for 10 minutes.
- Blend the soup to desired consistency using an immersion blender.
- Season with black pepper and adjust to taste. Serve warm.
Notes
- For a vegan adaptation, use plant-based milk and broth, and vegan butter.
- Adjust thickness by adding more milk or broth.
