Description

A soft, spiced cake filled with apple cider, warm spices, and grated Honeycrisp apples for a donut-inspired dessert


Ingredients

  • 1 ½ cups apple cider
  • 1 tablespoon vegetable shortening, or as needed
  • 3 cups all-purpose flour, plus more for dusting
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 3 ½ teaspoons ground cinnamon, divided
  • 3 large eggs
  • 1 cup firmly packed light brown sugar
  • 1 cup canola oil
  • ½ cup whole buttermilk
  • ¼ cup apple butter
  • 2 teaspoons vanilla extract
  • 1 cup white sugar, divided
  • 1 medium Honeycrisp apple, peeled and grated
  • ¼ cup unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C) and grease or line a bundt pan with parchment paper.
  • Reduce apple cider by simmering it on medium heat until it reduces to ¾ cup (about 15-20 minutes).
  • In a large bowl, combine flour, baking powder, baking soda, salt, nutmeg, cloves, and 3 teaspoons of cinnamon.
  • In another bowl, whisk together eggs, brown sugar, canola oil, buttermilk, apple butter, vanilla extract, and reduced apple cider.
  • Gradually add the dry ingredients to the wet ingredients, stirring until fully combined. Stir in the grated apple and melted butter.
  • Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick comes out clean.
  • While the cake is baking, mix 1 cup of white sugar and the remaining ½ teaspoon cinnamon in a shallow bowl.
  • Allow the cake to cool for 10 minutes, then remove from the pan and roll it in the cinnamon-sugar mixture.

  • The cake can be stored for up to 3 days at room temperature or refrigerated for up to 5 days.
